Cold Bean Salad

I love simple dishes. And I love to eat. But I do not have a lot of time to fuss in the kitchen these days.

Additionally, I try to use what I have in the house already, as opposed to racing to the store to buy something specific to create a dish. I had some roasted chicken and needed something of substance to go with it, that would last me until the late evening. This cold bean salad did the trick. Got my fiber in for today!

Cold Bean Salad
1 can organic black beans, rinsed
1 can garbanzo beans (chickpeas), rinsed
½ cup chopped celery
Handful of fresh parsley
¼ cup red onions, chopped
½ green pepper, chopped
½ red pepper, chopped
½ cup grape tomatoes, diced
2 tablespoons extra virgin olive oil
2 tablespoons organic apple cider vinegar
Kosher salt and freshly ground black pepper to taste

Mix ingredients together until combined. Chill and serve.
